Soups On




Happy New Year one and all! The home fires are burnin' and I have the kettle on the stove. It's time to put on the soup.

After the holidays I am always anxious to prepare some warm comfort food. Soup is such a pleasant departure from all the labor intensive holiday fare. Simple, filling, and easy to prepare. Amen?

So get out the soup kettle and try this Fazool. We love it.


1 Package (about 5 or 6- 4" links) HOT Italian sausage (I use Johnsonville, what else?) The broth will mellow the hot sausage to just the right amount of spiciness.
1 box favorite pasta ( Ditilini- It's short and round, good in soup) I have used spiral and wide egg noodles too with good results. your choice.
1 carton of good chicken broth (Homemade stock, even better)
1 can cannellini beans (large white kidney beans) drained and rinsed
4 stalks of celery
1/2 stick of butter
1 handful of baby carrots
4-5 cloves of garlic (minced or pressed)
1 Tablespoon olive oil
Spices: oregano, basil, parsley***

Preparation:

Chop celery and carrots, set aside
Slice open skins on sausage. Squeeze out sausage and pull into good sized chunks.
Brown and drain.
Set browned meat on a few paper towels in bowl for later.
Cook pasta,el dente, drain, and toss with olive oil and set aside.
In soup kettle, melt butter and throw in celery, carrots and garlic.
Saute until vegetables are el dente
Add sausage and beans
Add chicken broth and pasta

Turn up heat until soup just begins to boil and turn down to low or simmer.
Add spices.


*** Never add spices to real hot soup, they turn black and get bitter. Simmering soup is perfect for spicing. Adding fresh parsley brightens and nutritionally boosts the soup.

The soup will be even better the next day. It will be thicker though,so add a little water when reheating
.
